Belgian waffles

Belgium is the walhalla of waffles. What makes Belgian waffles stand out, is their huge size. But they will taste just as good using a normal size waffle iron. You can eat waffles with powdered sugar, fruits, whipped cream and/or chocolate topping.
Ingredients
- 250 g cake flour
- 10 g bakingpowder
- 10 g salt
- 4 large eggs, separated
- 25 g sugar
- 1/2 teaspoon vanilla extract
- 50 g unsalted butter, melted
- 0,5 l milk
Preparation
- Preheat the waffle iron.
- Sift together flour, baking powder and salt.
- In another bowl, beat together the egg yolks and sugar until the sugar is completely dissolved and the eggs have turned a pale yellow. Add the vanilla extract, melted butter, and milk to the eggs and whisk to combine.
- Combine the egg-milk mixture with the flour mixture and whisk just until blended.
- Oil the waffle grid.
- Beat the egg whites with an electric mixer until soft peaks form, about 1 minute. Gently fold the egg whites into the waffle batter.
- Pour enough batter in iron to just cover waffle grid. Close and cook until golden brown, about 2 to 3 minutes. Serve immediately.
